It’s a Good Day for This…


It’s cool, it’s rainy, and it’s a good day for a steaming hot cup of tea and homemade banana bread with streusel topping. The weather is suppose to be like this throughout the weekend here, so I hope this loaf lasts that long!

This recipe is one of my own and I bake a streusel topping right in to make it extra delicious. No one could ever tell it’s made entirely with oat flour.

Banana Bread with Streusel Top

Makes: 1 Loaf

3/4 cup brown sugar

1/4 cup honey

1/2 cup Earth Balance Spread

2 eggs

1 and 1/2 cups ripe mashed bananas {about 4 bananas}

1/2 cup unsweetened vanilla almond milk

1 tsp. white vinegar

1 and 1/2 tsp. vanilla

2 and 1/2 cups oat flour { made from grinding GF rolled oats}

1 tsp. baking soda

1 tsp salt

Streusel Topping

1/2 cup chopped walnut pieces

1 TBSP Earth Balance Spread

1/4 tsp. nutmeg

1 TBSP brown sugar

1 TBSP oat flour


Preheat oven to 350 degrees

For bread: beat together brown sugar, honey, Earth Balance, and eggs, until blended well

Blend in: mashed bananas, almond milk, vinegar, and vanilla

Add: oat flour, baking soda, and salt, making sure it is thoroughly mixed, but don’t over mix it

Place in greased loaf pan {I like to use glass}

Set aside while making streusel topping

Streusel Topping Instructions:

Mix all ingredients together by hand until well blended.

Sprinkle on top of batter in loaf pan

It’s that easy!


It should look like this… 


Set pan in the center of your preheated 350 degree oven

Bake for about an hour {test for doneness}

Cool in pan for at least 10 minutes

Then move to cooling rack

This will cut better once completely cooled and better yet after refrigeration.

I like to wrap it well and place in a Ziploc bag in the fridge once completely cooled.


It’s comfort food on a day like this…it’s comfort food everyday, but today is especially good for…
