Pumpkin Soup with Sage and Bacon

This Pumpkin Soup with Sage and Bacon from Debra at 5th and State is deliciously warm and cozy like being curled up with a soft throw sinking deeply into a comfy sofa on a chilly, overcast day.

Debra got the original recipe from a British magazine {source unknown}. It’s particularly great if you have leftover pumpkin, potatoes, and sage that you need to use up from Thanksgiving.

Here is what I did:

  • Followed this recipe  {keep scrolling past the Christmas DIY Urn…which is pretty too}
  • I left some of the potatoes in chunks as I wanted the soup thicker rather than completely a puree.

Helpful Hints:

  • The color of my soup came out more yellow than I anticipated.  Possibly it had to do with adding a tad more “floury white potatoes” …as the British description calls for.
  • This soup makes approximately 9 cups.
  • From start to finish it takes about 40 minutes to prepare.
  • You will most likely need to add more stock to thin the soup {personal preference}.
  • Allowing the flavors to meld makes this soup tastes best the day after you make it.
