Pin It! Tried and True Tuesday # 29: The Way to Start a Fall Morning



Pumpkin Oat Pancakes

I’ve made this pumpkin oat pancake recipe from COOKIE + KATE several times now, and each time they are as delicious as the last. Fourteen wonderful ingredients meld together to make a hearty and nutritious way to start a fall morning, or any morning of year! Thank you Kate. My family loves this recipe!

Here is What I Did:

 Followed this recipe

I used the options, in the batter, of butter {Earth Balance}, pure maple syrup, cloves, and almond milk.

Used homemade pumpkin puree {pre-made}, but you can used canned pumpkin too

Set a non-oiled electric skillet on 350 degrees, as stated

I ground old-fashioned oats in my NutriBullet to make the flour.

Helpful Hints:

  • Follow Kate’s instructions exactly, don’t over mix your batter, and let it sit for 10 minutes after mixing.
  • I cooked mine for 3 minutes until bubbly, flipped and cooked for about 1 – 1.5 minutes longer
  •  It made 7 pancakes  – medium size { about 4 – 4.5″}
  • From start to finish these took me about 25 minutes.
